stuffed peppers with turkey and vegetables
I'm not a health food fan, but as far as low fat dinners go, you'd be hard-pressed to find a recipe as flavorful as this one. I have made these peppers three times; each time has been a little different, but equally as great. The recipe as posted is delicious and healthy. If you want a little extra punch, as I did the second go around, mix in mozzarella cheese and extra spaghetti sauce before stuffing. This time I stuck to just a pinch of cheese during the last 5 minutes of baking. The recipe makes more stuffing than needed for 4 peppers, so you can serve the rest over rice or in an omelet the next day.
