roasted vegetable, feta, and hummus naan pizzas
I love this post for two reasons: the meal was wow-worth delicious, and the pictures turned out amazing without any help from Photoshop (a rare treat considering my amateur skills). I am proud to say I created these Roasted Vegetable, Feta and Hummus Naan Pizzas without any recipe, and couldn't have been happier with the result. I loved something vegetarian; go me! The sweet and flavorful roasted vegetables contrasted perfectly with the tangy feta, and the garlic hummus pulled everything together perfectly. I served the pizzas with a really nice Zucchini, Hazelnut and Feta Salad that made use of some of the leftover pizza ingredients. The recipe for the pizzas is included below.
1/2 of an eggplant, sliced
1 zucchini, sliced
1/4 red onion
Feta cheese, crumbled
3 servings of Naan
Crushed red pepper flakes
To roast the vegetables: Place sliced vegetables in a single layer on a baking tray. Drizzle with olive oil and sprinkle with 2 cloves minced garlic. Roast in the oven at 375 degrees for 30 minutes (tossing once midway through).
To assemble and bake pizzas: Spread garlic hummus to desired thickness over each Naan crust. Spread vegetables evenly over the pizzas, and add crumbled feta. Sprinkle with crushed red pepper flakes, to taste. Place pizzas on baking sheets in a 400 degree oven until Naan is warmed throughout and feta has started melting. Remove from oven; serve immediately.
