adam's dijon chicken pizza


I'm pretty excited about this post. Why? Because it's the first meal that I didn't cook at all... Adam did! As the infinitely awesome boyfriend he is, he decided to cook dinner two nights in a row when I was quite busy and stressed. The first dinner was good (cajun chicken breasts, pasta salad, and a bean salad), but this one was great. The idea came from a delicious little pizza place called Pub Dog in Baltimore, where they had a Dijon, tomato and chicken pizza. Adam was quite proud that he mixed two different mustards for his sauce (what a chef!) and recreated it without a recipe. I'll try to do the chef du jour justice with a recipe below.



Dijon Chicken Pizza
1 store bought pizza crust
Marinara sauce (fire roasted tomato used here)
2 chicken breasts
Pepper jack cheese
Sharp cheddar cheese
Mozzarella cheese
Dijon mustard
Coleman's mustard

1. Marinate chicken in mix of two mustards (predominantly Dijon, with a little Coleman's). Then saute chicken over medium heat until cooked throughout. 

2. Spread marinara sauce over store bought crust, followed by chopped chicken, and a mix of the three cheeses.

3. Drizzle Dijon mustard generously over the top. Bake according to instructions on the pizza crust package.
