roasted squash, chestnut and chicory salad with cranberry vinaigrette


My friend Kristen made this amazing fall salad for a girls night dinner a while back. I've been meaning to post it for weeks, but you know how these things go. You'd be hard pressed to find a dish that screams fall more than a Roasted Squash, Chestnut, and Chicory Salad with Cranberry Vinaigrette. It was truly delicious and incredibly unique. What the title of the recipe doesn't mention is that this thing is gloriously swimming in bacon and it's... um... essence? And by that I mean grease. Bacon grease. Mmmm. This was an impressive, hearty salad that was an unbelievably welcome addition to our dinner.

  1. when i first saw the title of this post, i was thinking, what is this healthy-sounding salad jordan just posted about?! then i realized that a) i had actually eaten it, b) bacon essence = not actually thaaaat healthy, and c) i had no idea that i liked chestnuts before eating this.
